​Our client is one of the most reconisable private members only operator within the UK. An exciting role as F&B Manager has arisen with a strong operational presence, supporting the Resident Manager with strategic goals and deputising in their absence. This person will ensure that the F&B department achieves financial goals set both in terms of revenue and subsidy level along with strong controls in purchasing, distribution, and storage.

Responsibilities:

  • Direct, coach and support the leadership team to promote and maintain a high level of member/guest service in line with SOPs and Leading Quality Assurance standards.

  • Responsible for achieving financial targets for all Food and beverage outlets; beverage COS, wage costs as a % of income, consumables and other expenses, in line with budgeted targets.

  • Lead and inspire F&B staff and management whilst ensuring that each Head of Department is working at their optimum.

  • Analyse and solve operational challenges with the Food & Beverage managers and liaise with the Resident Manager for positive outcome.

  • Liaise with the Events team to devise plans for beverage inspired functions (wine tastings and cocktail masterclasses etc).

  • Ensure effective inter-departmental communication within Pall Mall and at a Clubhouse level to achieve efficient teamwork and accurate information for members and guests.

  • Develop and maintain high employee morale through effective communication and reward and recognition programs as well as promoting a climate of enthusiasm and encouragement.

  • Ensure a common and coordinated high standard of service and culture, with a focus on attention to detail, consistency and efficiency across all F&B outlets at Pall Mall.

The person:

  • Extensive experience of Hotel operations management within luxury 4-5 star,

  • Personal licence holder

  • Bachelor degree in Hospitality or Business Management

  • Strong business, commercial and financial acumen

  • Proven ability to manage and coach constantly developing the team

  • Personable, amiable, empathic and a self-starter.

  • Operating knowledge of F&B systems, Fourth and Symphony

  • P&L management accounts and budget planning

  • Extensive knowledge in wines

  • Industry and supplier contacts with excellent networking skills

  • Problem solver
