Our client operates one of Scotlands most exclusive and prestigous hotels based in the highlands. They are currently looking to recruit an industry leading Head Chef to join their team.

Role Description

Ensure the kitchen is managed effectively and safely at all times, including the highest levels of control regarding cleanliness, food hygiene, HACCP, stock management and mise-en-place levels.Ensure quality food preparation and presentation, resulting in an unsurpassed dining experience every time.

1. Service Standards

Ensure our Standard Operating Procedures and Guest Journey are trained and implemented to ensure the team is equipped with the knowledge to provide excellent service to guests.

2. Food Creation

Inspire the team to create, develop and maintain an inspiring recipe book using the very best of local and national natural resources and ingredients.

3. Budgetary Responsibilities

Take full responsibility to demonstrate a high level of awareness to achieve target GP levels and wage percentages. Lead the Senior Sous Chefs in contributing towards the kitchen budget which in turn supports the General Manager to achieve the Hotel financial targets.

4. Relationships & Communication

Coach your team to achieve the highest standards.Work cohesively with the wider Hotel Team, particularly F&B and Front Office and have strong relationships with our suppliers. Display a high standard of colleague relations, promoting a professional image with a caring and helpful attitude. Information sharing is key.

5. Health & Safety

Create, maintain and promote a safe working environment by ensuring that you and your team are adhering to Health & Safety, Food Hygiene, Fire & Evacuation procedures and Licensing Laws.

6. Training

Take ownership of your personal development, enhancing your ability to build knowledge and make informed decisions, whilst supporting the development of your team through on job coaching and mentoring.

Proven experience required. Must have a strong work ethic, a passion for fresh food and brilliant service.Ability to work under pressure, coach and motivate a team. Be an excellent role model.
