​Our client runs a renowned Pub and Restaurant based in the heart of Picturesque Hitchin in Hertfordshire.  They currently have an exciting opportunity and are looking to recruit a Sous Chef to join their successful Kitchen Team.

Purpose

Assist in the management and the running of the kitchen at all times.

Key Accountabilities

  • To run the kitchen in the absence of the Head Chef to the standards expected by the organisation in accordance with the operating times. Remain focused and lead the team to be ready – you are responsible for all food that is served to guests.

  • Training ALL chefs to the company's food and service standards. Make sure as a team the kitchen is prepared and ready.

  • To assist the Head Chef in writing all menu’s with specs and recipes on the system, daily canapés, new cellar bar menus.

  • Make sure the staff food is organised and worthy of the company's staff – assist with then [planning of the menu and make sure we have healthy options.

  • To oversee all sections of the kitchen in the presence and absence of the Head Chef.

  • To support the head chef in working within all budgets set by the company. 

  • To ensure that personal rotas, daily and weekly work schedules are followed and correctly executed. 

  • Do a daily check of all walk-in fridge’s, freezers and service fridges – know what we have as stock.

  • To ensure that production levels are consistent to meeting the needs of the organisation

  • To adhere to portion control / policy standards and plating instructions at all times.

  • To ensure that mise-en-place and food products and non food products are stored correctly at all times. 

  • Hold a daily morning meeting with the staff and organise the team.

  • To minimise wastage at all times without compromising service – make sure we are making use of potential food wastage before it goes out of date. 

  • To attend training sessions when required and conduct on the job training. 

  • To ensure your section is kept clean and in an orderly fashion at all times. 

  • To ensure the entire kitchen is cleaned down to a high standard at the end of shift.

  • To ensure that all equipment / utensils in the section are correctly handled and maintained. 

  • To promote a good working atmosphere, lead by example and maintain a pleasant, courteous attitude towards your colleagues at all times. 

  • To observe the highest standards of your appearance through the proper care and attention of your uniform and maintain the highest levels of personal hygiene at all times. 

  • To observe and ensure the team comply with all company requirements and current statutory legislation with regards to fire precautions and evacuation, health and safety and work and food hygiene.

  • To perform any reasonable requests as may be required by the needs of the business.

  • Make sure the kitchen is left in a clean state at the end of the shift – check all fridges and blast chiller etc

  • Ensure the Kitchen Porters are working efficiently - set them clear goals for deep cleaning and check to make sure they are achieved.

We are looking for a dedicated and focussed Chef who have a minimum of 1 years Chef experience within a high quality setting.  You must be a strong leader within excellent interpersonal skills.
